By Fuji's Sengen Taisha shrine, a brewery founded in 1831 that filters Mt Fuji's spring water through a century of rock before it reaches the tanks.
Fuji Takasago Shuzo was founded in 1831 beside the western gate of Fujisan Hongu Sengen Taisha in Fujinomiya, when Shokichi Yamanaka first set up his brewery. Ever since, it has brewed using Mt Fuji's spring water, naturally filtered over roughly a century as it moves through the mountain's rock, together with the traditional techniques of Noto toji. The soft, mineral-gentle water gives the sake a smooth, mellow character rich in umami. The brewery welcomes visitors for reserved tours of about 45 minutes with tasting.
