A Yaizu brewery that established the Shizuoka-style ginjo, its sake famously hard to find nationwide.
Isojiman Shuzo has brewed in the port town of Yaizu since 1830, becoming one of Shizuoka's defining sake houses. It combines the traditional skills of Nanbu toji with its own brewing equipment, working with carefully selected Yamada Nishiki rice from Tojo-Akitsu in Hyogo Prefecture. The brewery established what's known as the Shizuoka-style ginjo, and its sake remains so sought-after nationally that it is genuinely difficult to find on shelves. The kura itself does not open its doors to public tours.
