A Nasukarasuyama brewery aging sake for decades in a WWII-era air-raid tunnel, held year-round at 10°C.
Founded in 1849, Shimazaki Shuzo is known for storing its sake in a tunnel dug during the Second World War as an air-raid shelter, now kept at a constant 10°C in total darkness. Since the 1970s the brewery has aged daiginjo there for the long term, building a dedicated line called Uroko for sake matured 10 or 20 years. Its Azuma Rikishi label takes its name from the second-generation owner's love of sumo wrestling. Tours of the tunnel kura are open to visitors, with tastings at the main shop.
