A modern Tochigi brewery brewing year-round off Nikko mountain water, with North Kanto's first FSSC22000 certification for a sake maker.
Founded in December 1973 in Tochigi City, Hokkan Shuzo draws on the abundant water and favorable climate of the Nikko mountain range for its brewing. The house blends technique passed down from the itinerant Echigo toji (master brewers) of Niigata with modern process control, running a four-season brewing system that keeps sake flowing out year-round rather than only in winter. In 2019, Hokkan became the first sake maker in the North Kanto region to earn FSSC22000 food-safety certification, underscoring an emphasis on consistency alongside tradition.
