A brand-new 2022 microbrewery on Hachioji's old post road, brewing fresh sake year-round from rice grown with its own neighbors.
Tokyo Hachioji Shuzo opened in 2022 on Kurobei-dori, a street in Hachioji that once thrived as a post town. Built as a compact but fully equipped urban microbrewery, it produces small-batch sake year-round rather than only in the traditional winter season, aiming for freshness and added value in every release. The brewery works from the philosophy that 'sake brewing is an extension of agriculture,' growing rice in collaboration with the local community and paying close attention to every step from brewing through storage and distribution.
