Since 1592, junmai-focused brewing in Oyama, Tsuruoka, one of Yamagata's most storied sake towns.
Haneda Shuzo has brewed in Oyama, Tsuruoka, since 1592, more than four centuries in one of Yamagata's classic sake districts. The house commits to junmai brewing, favoring a fresh, distinctive character across its range, from the Daiginjo Hyakka Muichirin to its Uzen Shirobai Junmai Daiginjo and Junmai Ginjo, milled from Yamada Nishiki and Miyama Nishiki rice. At its tasting room, open without reservation, visitors can sample a flight for a small fee that includes a miso pairing, and on fine days sit out on the terrace.
