A Haguro kura in Tsuruoka that brews only ginjo-grade sake, its whole output polished to an average 50%.
Founded in 1875 in the Haguro district of Tsuruoka, Yamagata, Kamenoi Shuzo brews exclusively at ginjo grade or above, with an average rice polishing ratio of 50% across its entire output. Its flagship, Kudoki Jozu — roughly 'silver-tongued' — has built a national following for its fragrant aroma and elegant sweetness. To protect that freshness, the kura maintains more than 200 tsubo (about 660 square meters) of refrigerated storage, keeping close control over how the sake ages before release.
