Takagi Shuzo has brewed in Murayama, Yamagata since 1615, drawing its water from Sakura Shimizu, a natural spring on Mount Hayama in the Ou mountains. Its Juyondai label is famed for a fragrant, floral ginjo aroma balanced by a rich, savory sweetness and a clean finish, a combination that has made it the most sought-after — and hardest to find — sake in Japan. The kura also produces Asahitaka, a honjozo-grade label, alongside the harder-to-source Juyondai releases.
