A Kurume house since 1699 that changes everything except what must be preserved — tasting sake today inside its 323-year-old Genroku-era storehouse.
Wakatakeya Shuzojo was founded in Tabaruzaka, Kurume, in 1699, when its first head, Denbei, built the brewery together with the local community. It draws brewing water from the Minanawa system, filtered through the Mino mountain range and rich in natural minerals, and grows Yamada Nishiki rice with contracted local farmers. Guided by the philosophy of changing everything except what must be preserved, the house balances tradition and innovation — and while its production building isn't open for tours, visitors can taste and buy sake inside its 323-year-old Genroku-era storehouse.
