Nihon Izumi Shuzo brews in a basement kura beneath a building near JR Gifu Station, drawing water from the underground flow of the Nagara River. The house favors "quality over efficiency," using an old-fashioned wooden press and the stable underground temperature to brew fresh sake through all four seasons. It's best known for its funakuchitori namazake series, sake drawn straight from the press.
