A Kakamigahara brewery built by a rice farmer, brewing 'Natural Sake' from Mino's rare Hatsushimo rice and Nagara River water.
Founded in 1920 in Kakamigahara, Gifu, by rice farmer Hayashi Eiichi, who set out to brew sake from rice he grew himself. The kura's 'Natural Sake' concept centers on Hatsushimo, a rice variety grown only in the Mino region of Gifu, and on underground water drawn from the Nagara River, one of Japan's three clearest rivers. Its Hyakujuro line, launched in 2010, takes its name from Kabuki actor Ichikawa Hyakujuro, and the brewery regularly hosts 'SAKE Saturday' tour and tasting events.
