In the old town of Takayama, a 130-year-old kura rebuilt itself in 2020 to carry Hida sake out into the world.
Hirata Shuzojo has brewed in Takayama's historic old town since 1895, drawing on the clear waters of the Miyagawa River and rotating between two Gifu rice varieties, Hida Homare and the rare Ise Hikari. In 2020 the brewery renovated its kura with a clear goal — introducing Hida sake to a wider, more international audience. The house style leans into rice-forward umami.
