A Takayama brewery in the Hida mountains devoted to "sake that intoxicates the heart" — best known for its bone-dry Oni Korosi.
In the mountain city of Takayama, Gifu, Oita Shuzoten brews under the guiding idea of "kokoro wo yowasu sake-zukuri" — sake-making that intoxicates the heart — with close attention to its water, rice and craft. The house is best known for Oni Korosi ("demon slayer"), a dry-style sake that has become its signature. At the brewery's own retail shop, visitors can taste and buy sake and shochu delivered fresh daily from the kura, including shop-only bottlings.
