IBI — a one-man kura brewing one of Japan's hardest bottles to find.
Sugihara Shuzo, founded in 1892 in Ono, Gifu, is an ultra-small kura where owner-toji Yoshiki Sugihara brews alone. Its label IBI — a few hundred koku a year — is among the most sought-after and hardest-to-obtain sakes in Japan, made with Ibi no Homare, a sake rice the house grows in its own fields. The brewery is not open for tours.
