Home to Hiroshima's first female toji, who personally revived a near-extinct local rice to keep Akitsu's brewing heritage alive.
Founded in 1868 in Akitsu, the birthplace of the Hiroshima toji tradition, Imada Shuzo Honten is led today by Imada Miho, the prefecture's first female master brewer. Facing the near-extinction of Hattancho, a rice variety native to Hiroshima, she took on reviving its cultivation herself. The kura also experiments boldly, brewing Umikazedo ("Seafood") with white koji instead of the usual yellow koji, work that has drawn attention from sake drinkers well beyond Japan.
