The oldest-ranked kura on Saijo's sake row, brewing a gently sweet, clean-finishing "umakuchi" style since 1675.
Founded in 1675, Hakubotan Shuzo is regarded as the most venerable house on the Saijo sake-brewers' row in Higashihiroshima. The kura mills its own rice and tends its own brewing water and koji-making with care, aiming for an umakuchi style — slightly sweet with a clean, crisp finish. Its Tenpo-gura storehouse and a display room in the main building are open to the public, with tastings and brewery-only sake for sale on weekdays from 9:30 and weekends from 10:30; groups of ten or more should contact ahead.
