Umeda Shuzojo brews in Funakoshi, Hiroshima, using spring water pumped from 60 meters beneath Mt. Iwataki as its brewing water, paired exclusively with Hiroshima-grown Senbon Nishiki rice and Hiroshima ginjo yeast. Its Honshu Ichi label is built around muroka genshu — unfiltered, undiluted sake — to preserve its fruity aroma and full body. Every bottle in the range shares the same rice and yeast, giving the lineup a consistent regional character.
