A Meiji-era brewery in Saijo built on one belief — 'there is heart within the sake' — using only Hiroshima-grown rice, self-milled in house.
Founded in 1873 in Saijo, Higashi-Hiroshima, Kamotsuru builds every batch on a single conviction the brewery calls shuchu-zaishin — 'there is heart within the sake.' It mills its own rice, using only Hiroshima-grown grain such as Yamada Nishiki and the prefecture's own Hiroshima Nishiki variety. Traditional kimoto fermentation, started by hand in wooden vats, continues alongside modern craft, and the results have drawn repeated recognition at international competitions including the IWC and Kura Master.
