Fukuyama's last local sake house, pulling ultra-soft 'ancient water' from 200 meters down — and even brewing with yeast collected from a rose.
Tenpoichi has brewed in Kannabe, Fukuyama, since 1910 and remains the city's only local sake brewery, with more than a century of history. Its brewing water, drawn from 200 meters underground past two rock strata, is an ultra-soft water the brewery calls 'ancient water.' Built around the idea of sake as 'a supporting player that brings out washoku,' Tenpoichi aims for food-friendly sake balancing gentle acidity with rice umami — including Rose Mind, brewed with a rose yeast isolated from Fukuyama's own 'Mister Lincoln' roses.

Brewed with rose yeast — koji rice polished to 55%, kakemai to 60%, Hiroshima Senbonnishiki rice
