In a small fishing town between three mountains and the Seto Inland Sea, Aihara Shuzo chases the clarity of "the moon shining bright after rain."
Founded in 1875 in Nigata, a small town east of Kure hemmed in by mountains and the Seto Inland Sea, Aihara Shuzo brews under the name Ugonotsuki — "the moon that shines clear and bright in the sky after rain." It is the image the kura's brewers hold as their standard: sake as pure and beautiful as that post-rain moonlight. Since 1988 the brewery has committed fully to quality-first, ginjo-grade brewing, using spring water from Mt. Noro and the bounty of the Seto Inland Sea, and has won gold at Japan's National New Sake Awards for 12 consecutive years, alongside a gold medal at the IWC.
