Japan's largest sake maker, brewing in Nada's Mikage district since 1743 — down to breeding its own rice.
Hakutsuru has brewed in Mikage, one of the five famed brewing villages of Nada in Kobe, since 1743. Now Japan's largest sake producer, it is rare among great houses for developing its own sake rice — Hakutsuru Nishiki — and overseeing everything from paddy to bottle. Traditional hand-craft technique runs alongside modern brewing science, and the Hakutsuru Sake Brewery Museum, set in a wooden kura from the early 1900s, walks visitors through the craft free of charge.
