Izumi Shuzo has brewed since 1756 in Kobe's Mikage district. The 1995 Great Hanshin earthquake burned the kura to the ground, and the house did not resume its own brewing until 2007, when it relaunched under the label Sensuke, named for founder Izumi Sensuke. The rice is 100% Hyogo-grown, sake-brewing varieties, made using the Tanba-style method to draw out the rice's natural sweetness.
