"Be a stopped clock": five centuries of deliberately unchanging sake, amber-hued and rich in umami.
Kenbishi has brewed since 1505 — more than five hundred years of resisting fashion. The house motto, 'be a stopped clock,' means the taste must never drift; to hold it constant, the brewery adjusts its rice polishing every year to match the harvest, which is why no polishing ratio ever appears on the label. Minimal filtration leaves the sake amber-toned and deep in umami. Levelled by the 1995 Hanshin earthquake, the kura rebuilt — and carried on unchanged.
