Japan's oldest surviving sake brand, brewing in Itami — the "birthplace of seishu" — since 1550.
Konishi Shuzo has brewed in Itami since 1550, making it home to Hakuyuki, the oldest sake brand still in production in Japan. The city itself is known as the birthplace of seishu, clear filtered sake, and in 2020 was recognized as a Japan Heritage site, followed by GI Itami certification in 2024. Alongside its sake, Konishi brews Itami Beer, a craft beer line, and runs the Hakuyuki Brewery Village Chojugura, a restaurant, museum and shop complex spanning more than 475 years of brewing history.
