A rice merchant turned Nada brewer in 1717 — and, three centuries later, a pioneer of low-alcohol junmai sake.
Sawanotsuru began as a rice dealer in 1717 and has been part of Nada Gogo, Kobe's storied cluster of five brewing districts, for more than three hundred years. The house has built its identity around junmai — sake made purely from rice, water, koji and yeast, without added alcohol — and pushed that focus into new territory with SHUSHU, an early entry into low-alcohol junmai sake at 10.5% ABV. Its brewing museum, Sawanotsuru Shiryokan, is a nationally designated cultural property.
