A Himeji brewery, since 1629 and at its present Yumesaki site since 1805, drawing its water from sacred Mt. Sepphiko.
Tsubosaka Shuzo began brewing in 1629 in Himeji's Kodera district and moved to its present site in Yumesaki in 1805. The kura draws its brewing water from the spring beneath Mt. Sepphiko, one of Japan's three sacred 'Hikoyama' peaks. Now in its tenth generation, the family-run brewery was designated an Important Scenic Building by the city of Himeji in 2008. It continues to experiment with unfiltered, unpasteurized nama-genshu sake and brewing with flower-derived yeast strains.
