Near Odawara's famous plum groves, the only local sake brewed with a mochi-rice fourth stage.
Ishiijozo is based in Oi, Kanagawa, near the Soga plum groves famous as the source of Odawara's dried plums. Where most sake mashing uses a standard three-stage process, Ishiijozo adds mochi (glutinous) rice in a fourth stage, brewing its Soga no Homare with spring water filtered through the Tanzawa mountains. Its plum liqueur, made with Shirakaga plums, won gold in the sake-based category of the 2022 National Umeshu Competition.
