Established in 1960 in Fushimi, Kyoto, the Fushimi Meishu Cooperative brings together three local breweries — Yamamoto Honke, Toyosawa Honten and Heiwa Shuzo — to brew jointly under a single shared label. The sake is made with Shirogiku-sui, a medium-hard spring water drawn from the Fushimi district, valued for the soft, gentle mouthfeel it lends the finished product. The arrangement lets three historic houses pool resources while keeping Fushimi's water-driven brewing style at the center of the work.
