In a village of Kitayama cedar forests, Haneda Shuzo braves -10°C winters to brew with rice it grows itself.
Founded around 1900 in Keihoku, a village in the Kitayama cedar country of northern Kyoto, Haneda Shuzo draws its brewing water from the upper reaches of the Katsura River and grows its own sake rice, a variety called Iwai. Winter temperatures here can drop to -10°C, cold the brewery uses to its advantage, and it continues to brew in wooden vats in keeping with older methods. Visitors can taste the sake on-site.
