The Ishinomaki brewery whose dry, umami-rich Hidakami sake is the house pour in sushi counters nationwide.
Hirakou Shuzo has brewed in Ishinomaki, a Sanriku fishing port in Miyagi, since 1861. Its guiding motto — roughly, 'if it's seafood, it has to be Hidakami' — sums up a house style built entirely around the catch: a dry, clean sake designed to stand up to the fresh fish and shellfish that come off the Pacific. That focus has earned Hidakami a following well beyond Miyagi, and it is now a fixture on the sake lists of sushi and seafood restaurants across Japan.
