Kimoto brewing at 800 metres on the upper Chikuma River.
Kurosawa Shuzo, founded in 1858, brews at 800 metres above sea level in Sakuho, where the Chikuma River runs young below the northern Yatsugatake range. Good water makes good sake, runs the house creed, and its soft Chikuma subsoil water feeds a devotion to traditional kimoto brewing — a deliberate return to origins. A shop, gallery and tea room adjoin the kura; tours and tastings are offered.
