The oldest kura in the Kiso valley, born of a highway post town.
Nishio Shuzo is the oldest surviving sake brewery in the Kiso valley, its origins in the Edo period when the Nishio family — once senior retainers of the Kiso clan — served as village head and inn of the Suhara post station on the Nakasendo highway while brewing sake. Its Kiso no Kakehashi label is brewed with the Kiso Birei spring water; a rustic activated nigori called Somazake nods to the valley's woodsmen. Shop and tastings daily 9:00–17:30.
