The Story of 髙天酒造

Founded in 1871 in Okaya, Nagano, Koten Sake takes its name not from a place but from a posthumous Buddhist name -- Koten Ryokyo Zenjomon -- given to an ancestor of founder Mikinosuke Takahashi. The brewery runs on a sibling partnership: a sister brews while her brother manages the business, guided by a Suwa toji (master brewer). Using rice grown for sake within Nagano prefecture, Koten crafts dry, crisp sake shipped mostly to its home Suwa region -- a true regional jizake rather than a national brand.
