A Kurashiki brewery still running a century-old hydraulic press recognized as living industrial heritage.
Morita Shuzo has brewed in the old merchant quarter of Kurashiki since 1905, using the fully open fermentation methods of an earlier era. Its hydraulic lift-and-press machine, still in daily use, was recognized as a Society for Industrial Heritage-endorsed asset in May 2020. The brewery's dry honjozo, Mannenyuki Karaman, won a top award in the kanzake (warmed-sake) category at the 2024 Hiroshima Regional Taxation Bureau sake competition.
