A Mimasaka brewery in Omachi rice country, still pressing every batch the old way with a wooden fune.
Tanaka Shuzojo, founded in 1920, brews in Mimasaka, in the cool northern hills of Okayama. The kura presses each batch by hand using a traditional wooden fune press, working with clear local water and Omachi rice, the heirloom sake rice associated with the region. Its labels include the flagship Musashi no Sato and the historic Ohara Hakubai, alongside a junmai bottled within a year of brewing for peak freshness.
