Akishika — pesticide-free rice, all junmai, grown and brewed on one hill.
Akishika Shuzo was founded in 1886 in the highland town of Nose, north of Osaka, by Okunoshika-nosuke. Under its creed of farming and brewing as one, the house grows Yamada Nishiki and Omachi in its own paddies without pesticides or chemical fertiliser, and brews junmai only — dry, deep sake where rice umami and acidity lead. Visitors are welcome in opening hours (9:00–16:45).
