A Kusatsu house tracing its lineage to the master who built Edo Castle, brewing across three sites from Shiga to Kobe.
Ohta Shuzo, based in Kusatsu, Shiga, traces its founding family back to Ota Dokan, the famed builder of Edo Castle, and named its flagship sake Dokan in his honor. The brewery now operates across three sites — Dokangura and Fujingura in Kusatsu, and Chiyodagura in Nada, Kobe — plus a winery in Ritto. At Chiyodagura, techniques passed down by Noto toji sustain a yamahai brewing tradition, a slower, more labor-intensive method that builds natural acidity.
