A Meiji-era Nagahama brewery nearly lost, then revived by local youth and a new toji chasing 'Nagahama terroir.'
Founded in the Meiji era in Takatsuki, on the shores of Lake Biwa in Nagahama, Yamaoka Shuzo brews mainly with locally grown Koshihikari rice for a community that has long cherished its sake. When the kura's fire nearly went out, a group of local young people who wanted to save it stepped in, bringing on a new toji (master brewer) to start it up again. Today the brewery works under the banner 'brewing people, brewing community, brewing the future,' aiming to capture the terroir of Nagahama in each bottle.
