Kaiun — the sake of good fortune, milled at home in Kakegawa.
Doi Shuzojo, founded in 1872 in Kakegawa, Shizuoka, brews Kaiun — literally, the opening of fortune — now past its 150th year. In the Noto toji tradition and polishing all its rice in-house, the house pursues food sake that flatters any table, Japanese or Western. The kura is not open for tours.
