Gotemba's last surviving sake brewery, founded in 1900, drawing 13°C spring water straight from beneath Mt Fuji for traditional yamahai brewing.
Negami Shuzo was founded in 1900 at the foot of Mt Fuji in Gotemba, Shizuoka, at an elevation of about 480 meters. The brewery taps water that rises naturally from 80 meters underground on Mt Fuji, a spring that runs a constant 13°C year-round and is slightly harder than the springs of the Southern Alps. Producing roughly 200 koku (about 36,000 liters) a year, it is now Gotemba's only remaining sake brewery, and continues to practice yamahai brewing — a slow, traditional method reconstructed from Taisho-era records — for its flagship, Kinmei.
