Shidaizumi Shuzo, founded in 1882 in Fujieda, Shizuoka, stands where its founder found good water rising — subsoil water of the upper Setogawa hills, ultra-soft at hardness 3.4. It leans local: Fujieda-grown Homare Fuji and Yaizu-grown Yamada Nishiki, with three of its sakes certified under the GI Shizuoka designation. Even its sake lees are sold into the local food culture. The kura is not open for tours.
