Kanzawagawa Shuzojo, founded in 1912 in Yui — the sixteenth post town of the old Tokaido — brews Shosetsu with subsoil water of the Kanzawa River. Its sake pairs a dry edge with a soft, rounded body, built on koji-making the house treats as the foundation of everything, and on Shizuoka yeast in the classic Shizuoka ginjo style.
