Hakuin Masamune — named by a sword saint, junmai-only since 2012.
Takashima Shuzo, founded in 1804 in Numazu, Shizuoka, brews Hakuin Masamune — a name bestowed in 1887 by the sword master Tesshu Yamaoka, punning on the great Zen priest Hakuin and clear sake. Since 2012 the house has abolished added-alcohol brewing entirely, making only junmai, centred on kimoto and built from Shizuoka's Homare Fuji rice and Yamada Nishiki grown in nearby Nakaizu. The kura is not open for tours.
