A Moka house since 1754 proving that smallness is a virtue — handcrafted sake made by Shimotsuke toji along the Kinugawa river plain.
Tsujizenbei Shoten has brewed its Sakuragawa label in Moka, Tochigi, since 1754, sitting amid the fertile rice country of the Kinugawa river system. The brewery holds to the conviction that only a small operation can achieve a truly handcrafted taste, and its Shimotsuke toji continue that handmade tradition while folding in new techniques and a younger sensibility. Its tasting room, Jizakekan, offers a look at the brewery's history and process along with tastings, available by phone reservation.
Daiginjo — Yamada Nishiki rice polished to the extreme, every step done entirely by hand
Junmai Ginjo — contract-grown local Gohyakumangoku rice, Kinugawa river system water, Tochigi-bred T-1 yeast
Ginjo — reflects the full, rounded character of Yamada Nishiki rice, with a rich, clean finish that doesn't tire the palate
