Near the end of the Ome line, where the Tama River cuts a gorge through the hills, Ozawa Shuzo has brewed Sawanoi since 1702; the classic move is a post-tour tasting with the river murmuring below. In Fussa, Ishikawa Brewery makes Tamajiman sake and craft beer on the same estate — a self-styled 'theme park for drinkers,' Italian restaurant included. In Higashimurayama, Toshimaya Shuzo brews for Toshimaya Honten, a Kanda institution four centuries old, and opens its doors every Saturday. All three are about an hour by train from Shinjuku — as good for a visitor's first sake experience as for a local's weekend.
