Yonezawa's 429-year-old purveyor to the Uesugi clan, now led by its 23rd generation.
Kojima Sohonten has brewed in Yonezawa, Yamagata, since 1597, and the family's 23rd generation now leads a house that once served as official sake purveyor to the Uesugi clan. Its brewing water is snowmelt from Mt. Azuma, drawn from groundwater a steady 11°C, and its rice comes from contract farmers working with the Yonezawa Sake Rice Research Association. In 1984 the brewery opened Toko no Sakagura, a sake museum among the largest in the Tohoku region, and its sake has won an IWC Daiginjo Trophy.
