A Tendo kura where the fifth-generation owner-brewer grows his own rice, brewing only junmai sake under the Yamagata Masamune label.
Founded in 1898 in Tendo, Yamagata, Mitobe Shuzo lives by the motto 'sake brewing starts with growing the rice,' cultivating its own sake rice through its agricultural arm, Mitobe Inazo. Brewing water is hard, drawn from underground flows of the Ou mountain range, giving the Yamagata Masamune line its rich rice-driven umami balanced against the brand's namesake sharpness. Fifth-generation owner and toji Mitobe Tomonobu brews the kura's entire output as junmai — pure-rice sake, with no added alcohol.
