A Sakata kura devoted entirely to junmai daiginjo, polishing one label down to a mere 1% of each grain.
Tatenokawa has brewed in Sakata, Yamagata since 1832, but its defining choice came later: the kura now makes nothing but junmai daiginjo, the most exacting grade of pure-rice sake. Every label is built around how far the rice is polished, from the everyday Seiryu at 50% down to Komyo, an extreme 1% polish that pushes milling technology to its limit. That single-minded focus on polish and rice has made Tatenokawa's all-junmai-daiginjo philosophy one of the most distinctive in Japanese brewing today.
