A Yamaguchi 'Domaine' that brings wine's idea of terroir to sake, growing its own rice by the Koto River.
Founded in 1888 in Ube, Yamaguchi, Nagayama Honke Shuzojo brews under the name Taka, chosen after generations of head brewers who bore it. Calling itself Domaine Taka, the house borrows winemaking's terroir concept, growing much of its own Yamada Nishiki alongside rarer varieties like Yamada Ho and Omachi, and drawing mineral-rich water filtered through the limestone of the Koto River. Its Junmai Daiginjo Platinum, milled to 40%, sits at the top of a range built entirely around the credo 'Think Globally, Act Locally.' The brewery welcomes visitors for reserved tours and holds an annual sake festival each spring.
