Deep in the mountains of Iwakuni, Yamaguchi, Dassai brews under a single conviction: sake should be savored, not merely sold. Everything the house makes is Junmai Daiginjo — the top grade of pure-rice sake — using only Yamada Nishiki rice. Dassai abolished the traditional toji (master brewer) system; instead the whole team brews together, guided by data. The flagship Dassai 23 is polished to an astonishing 23% of each grain, and the brewery now runs its own venues abroad, including L'IZAKAYA DASSAI in Paris.
